非常惹味送飯一流的菜式🥰自己煮可以用大大隻南非鮑魚!2百幾蚊有8隻!出街食一定貴好多😝

鮑魚要避免炒到肉質變韌,記得不可以在活生生的時候擦洗,要不然鮑魚會收縮肉質變韌💖另外最重要用大火快炒,煮鮑魚的時間不可以多過4分鐘😗

❤️‍🔥薑蔥爆炒鮮鮑魚📝食譜
烹調時間⏱30分鐘

🔸材料🔸
鮮鮑魚 8隻
薑 6片
乾蔥 4粒切半
蒜頭 6瓣
蔥 4棵切段
紅尖椒 可省略

🔸調味料🔸
冰糖 1小粒
紹興花雕酒 1湯匙
蠔油 2-3湯匙
生抽 2茶匙
老抽 半茶匙
魚露 半茶匙
生粉水 50ml (2茶匙生粉+50ml水)

🔹做法🔹

  1. ▪️處理鮑魚▪煮滾薑蔥水,熄火放入鮑魚浸20秒後撈起浸冰水,去除外殼和腸臓,撕去鮑魚嘴
  2. 放入生粉水浸泡10分鐘去污,用牙刷刷走裙邊和隙位的污垢,𠝹花撲上生粉
  3. ▪️炒鮑魚▪️下油開鍋,放入鮑魚,大火煎香兩邊後盛起(1分鐘)
  4. 同一個鍋煎香蒜頭和薑片至金黃,加入乾蔥和蔥白炒香,下冰糖炒至溶化
  5. 放入鮑魚拌炒,灒入紹興花雕酒;下其餘調味料大火快炒,下生粉水煮至變濃稠,加入蔥段炒勻即成(視乎鮑魚大小,全程不要超過4分鐘)

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

  • 8 fresh abalones
  • 6 slices ginger
  • 4 dried shallots, halved
  • 6 cloves garlic
  • 4 spring onions, cut into sections
    (optional) 1 red chili pepper

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀

  • 1 small rock sugar
  • 1 soup spoon Shaoxing wine
  • 2-3 soup spoon oyster sauce
  • 2 tsp light soy sauce
  • 1/2 tsp dark soy sauce
  • 1/2 tsp fish sauce
  • 50ml potato starch water (2 tsp potato starch + 50ml water)

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Boil ginger and spring onion in water, add abalones to soak for 20 secs. Remove and soak in ice water. Remove shells and intestines, tear off abalone mouth.
  2. Soak abalones in cornstarch-water mix for 10mins to remove dirt. Use toothbrush to brush dirt, pat cornstarch.
  3. Heat oil in pan, fry abalones until fragrant both sides (1min).
  4. In same pan, fry garlic, ginger until golden, add shallots, white part of the spring onion until fragrant. Add rock sugar, stir-fry until melted.
  5. Add abalones, Shaoxing wine, remaining seasonings, stir-fry on high heat. Add potato starch water, cook until thickened. Add spring onion and stir-fry. Whole process <4mins.
