今天天氣開始轉涼啦,分享一個暖暖的養生湯麵食譜🥰見台灣朋友秋冬時常煮麻油雞湯,整個fusion版米線😛一煲過30分鐘就煮好,好適合下班煮❤️

今次用新鮮米線,不用汆水直接煮就OK!方便又好味🫶🏻加入蟲草花和杞子,更加滋補呀😙

🌼蟲草花麻油雞湯米線📝食譜

烹調時間⏱30分鐘

🔸材料🔸

雞脾 3隻約400g

鮮米線 3-400g

薑 10片

麻油 4茶匙

米酒 80ml

生抽 1茶匙

雞湯 600ml

水 200ml

🔸配料🔸

蟲草花 25g

杞子 1湯匙

黑木耳

去核紅棗 (怕燥熱可省略)

🔸雞醃料🔸

麻油 2茶匙

薑 4片

蔥 1棵切段

米酒 1湯匙

🔹做法🔹

1. 雞用醃料醃15分鐘

2. 下麻油開鍋,放入薑片小火慢煎至捲曲轉啡黃色,加入雞件炒至表面焦香

3. 倒入米酒,中火煮3分鐘至酒精蒸發;加入雞湯和水煮沸,放入蟲草花和紅棗,合蓋小火煮15分鐘

4. 下生抽和砂糖調味,加入米線、杞子和黑木耳煮熟即成

🌼Sesame Oil Chicken Noodles

🔸Ingredients🔸

Chicken drumstick 3 px

Rice Noodles 3-400g

Ginger 10 px

Sesame oil 4 tsp

Rice wine 80 ml

Soy sauce 1 tsp

Chicken broth 600ml

Water 200ml

Cordyceps flower 25g

Goji berries 1 tsp

Black fungus/ red date

🔸Chicken Marinade🔸

Sesame oil 2 tsp

Ginger 4 px

Spring onion 1 px

Rice wine 1 tsp

🔹Instructions🔹

1. Marinate the chicken for 15 minutes

2. Heat sesame oil in a pan, add sliced ginger and simmer over low heat until brown, add chicken thigh and cook until the surface turns brown

3. Add rice wine, boil for 3 minutes on medium heat until the alcohol evaporates; add chicken broth and water until boil, add Cordyceps flowers and red date, cover the lid and cook on low heat for 15 minutes

4. Add soy sauce and sugar to taste, add rice noodles, goji berry and black fungus, serve when fully cooked
