好豪華的烏冬🌟昨天收到回圖,想起之前都煮過沒出過post,寫食譜留個record😛海膽除了配意粉,配烏冬都好掛汁好食!自己煮好簡單,15分鐘就煮好😎而且一定真材足料,用了北海道馬糞海膽煮醬汁🇯🇵味道好濃郁,每一口都是鮮甜海膽味🤤
因為想保留海膽的鮮味,我這個食譜沒有加太多調味料,材料非常簡單😙另外加入三文魚籽,除了擺盤漂亮,味道更加豐富呢💕

💖海膽三文魚籽忌廉烏冬📝食譜
烹調時間⏱15分鐘
🔸材料🔸
急凍烏冬 2片
海膽 250g
三文魚籽 (可省略)
鮮奶 700ml
鹽 半茶匙
🔸麵糊材料🔸
低筋麵粉 1湯匙
無鹽牛油 1湯匙
🔹做法🔹
1. 海膽、牛奶和鹽用攪拌機攪滑(預留一部份海膽擺盤);倒入大鍋小火加熱
2. 放入急凍烏冬煮至散開,上碟
3. ▪️製作麵糊▪️煮溶牛油/微波爐熱溶牛油,加入麵粉攪拌均勻
4. 海膽汁逐少加入麵糊,小火煮至理想濃稠度,倒上烏冬,鋪上剩餘的海膽和三文魚籽裝飾,可用火槍燒海膽至焦香

🔸Ingredients🔸
Frozen udon 2px
Sea urchin 250g
Salmon roe (optional)
Milk 700ml
Salt half tsp
Flour 1 tsp
Unsalted butter 1 tsp
🔹Instructions🔹
1. Blend the sea urchin, milk and salt (reserve some of the sea urchin for serving); pour into a large pot and cook over low heat
2. Put in udon, serve on a plate once it is cooked
3. In a small pan, mix the butter and flour until smooth
4. Add the mixture into the sea urchin sauce gradually, cook on low heat until getting creamy. Pour onto the udon, decorate with sea urchin and salmon roe and done!
