🍷法式紅酒燉梨📝食譜
烹調時間⏱1小時
🔸材料🔸
啤梨 2-4個
紅酒 500ml
🔸調味料🔸
片糖/ 砂糖 50g
檸檬 半個 (檸檬皮+ 檸檬汁)
肉桂(Cinnamon) 1條
八角 2粒
丁香(Cloves) 1茶匙
🔹做法🔹
1. 紅酒和調味料加入小鍋,煮滾後合蓋小火煮15分鐘出味
2. 啤梨去皮去芯,塗抹檸檬汁防止氧化;放入步驟1的紅酒,合蓋小火煮20分鐘
3. 啤梨翻面,繼續合蓋小火煮20分鐘至表面上色;熄火焗20分鐘(中途再翻面一次)
4. 放4度雪櫃浸一晚,先取出啤梨,中火燒熱紅酒汁令其變得濃稠,淋上啤梨即成
✨Tips
🌟橙皮和檸檬皮不要削到白肉,不然會有苦澀味
🌟切勿用大火燉煮啤梨,避免果肉煮得太軟

🍷Red Wine Poached Pear
🔸Ingredients🔸
Pear 2-4 px peeled
Red wine 500ml
🔸Seasonings🔸
Brown sugar 50g
Lemon 1/2 px
Cinnamon 1 px
Star anise 2 px
Cloves 1 tsp
🔹Instructions🔹
1. Boil the red wine with seasonings, simmer for 15 minutes
2. Rub the pear with lemon juice to prevent oxidation; add into the red wine in step 1, simmer for 20 minutes
3. Flip the pears, continue to cook under low heat for 20 minutes until the surface; turn off the heat and set aside for 20 minutes
4. Put into refrigerator for a night. Put the pear on serving plate, boil the red wine and pour over the pear and done!
