泰式菠蘿炒飯 泰式食譜

🍍𝙏𝙝𝙖𝙞 𝙋𝙞𝙣𝙚𝙖𝙥𝙥𝙡𝙚 𝙁𝙧𝙞𝙚𝙙 𝙍𝙞𝙘𝙚 – 𝙀𝙣𝙜 𝙧𝙚𝙘𝙞𝙥𝙚 𝙞𝙣𝙘𝙡𝙪𝙙𝙚𝙙🌟

對上一次煮菠蘿炒飯已經幾年前,明明這麼美味,想不起這個菜式🤣自己整好簡單,又可以用新鮮菠蘿❤️‍🔥原個菠蘿直接上桌特別吸睛,好適合宴客party煮😎

我喜歡將炒飯放入菠蘿焗,令米飯更加入味😙今次用了泰式豉油,味道更正宗!不想特別買都可以用生抽代替🥰

🍍泰式菠蘿炒飯📝食譜
烹調時間⏱30分鐘

🔸材料🔸(2人份)
白飯 2碗
菠蘿 1個
雞蛋 2隻
去皮雞脾扒 2塊切粒
蝦仁 6隻
提子乾、腰果、豬肉鬆

🔸醃料🔸
生抽 1茶匙
咖喱粉 1茶匙
胡椒粉

🔸調味料🔸
咖喱粉 約2茶匙
薑黃粉 半茶匙
魚露 1茶匙
生抽 1茶匙
蠔油 1茶匙
椰糖/ 砂糖 半茶匙
胡椒粉

🔹做法🔹

  1. ▪️預備食材▪️菠蘿直放,如圖把三之一部份切開;另外一邊在果肉𠝹井字,用匙羹挖出菠蘿肉; 雞粒和蝦用醃料醃15分鐘
  2. 用廚房紙吸乾菠蘿的水份,濕紙巾和錫紙包住菠蘿葉;130度焗30分鐘風乾(中途菠蘿會出水,可再用廚房紙吸乾)
  3. ▪️烹調▪️下油開鍋,分別煎香腰果,雞粒和蝦,盛起備用
  4. 2隻蛋拌勻,加入鹽和胡椒粉;下油開鍋,加入白飯,倒入蛋漿炒至每粒米飯都沾滿蛋汁,加入調味料和配料炒勻,最後加入菠蘿肉
  5. 炒飯放入菠蘿容器,130度焗15分鐘,灑上豬肉鬆即成

  • 2 bowls of white rice
  • 1 pineapple
  • 2 eggs
  • 2 diced chicken breast pieces
  • 6 shrimp
  • Raisins, Cashews, Pork floss
  • Marinade: 1 tsp soy sauce, 1 tsp curry powder, black pepper
  • Seasoning: 2 tsp curry powder, 1/2 tsp turmeric powder, 1 tsp fish sauce, 1 tsp soy sauce, 1 tsp oyster sauce, 1/2 tsp sugar, black pepper

Instructions:

  1. Cut and scoop out pineapple. Marinate chicken and shrimp for 15 minutes.
  2. Dry pineapple in oven at 130°C for 30 mins.
  3. Fry cashews, chicken and shrimp separately and set aside.
  4. Beat 2 eggs with salt and black pepper. In same pan, add rice, eggs, seasoning, and ingredients. Stir-fry and add pineapple flesh.
  5. Transfer to pineapple container. Bake at 130°C for 15 mins. Sprinkle pork floss and serve.
