烹調時間⏱20分鐘

🔸材料🔸
雞翼 8隻剪半
蒜頭 10瓣
乾蔥 4粒切半
青花椒/藤椒 2湯匙
辣椒乾 10條
青辣椒 1條切段 (可省略)
生抽 2茶匙
砂糖 半茶匙

🔸醃料🔸
生抽 2茶匙
老抽 1茶匙
紹興花雕酒 1茶匙

🔹做法🔹

  1. 雞翼切半,印乾水份醃30分鐘;生粉和胡椒粉混合,雞翼拍上粉
  2. 下油開鍋,雞皮向下放入雞翼;中小火半煎炸至表面金黃;翻面煎約4分鐘;筷子插入無血水即代表全熟
  3. 下油開鍋,炒香蒜頭、乾蔥、辣椒乾、青辣椒和藤椒;放入雞翼,加入生抽和砂糖炒勻即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
8 chicken wings, cut in half
10 cloves of garlic
4 shallots, cut in half
2 tablespoons green Sichuan peppercorns / rattan peppercorns
10 dried chili peppers
1 green chili pepper, cut into sections (optional)
2 teaspoons light soy sauce
½ teaspoon granulated sugar

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
2 teaspoons light soy sauce
1 teaspoon dark soy sauce
1 teaspoon Shaoxing huadiao wine

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Halve chicken wings, pat dry, marinate 30 mins. Coat with cornstarch-ground pepper mix.
  2. Heat oil, pan-fry wings skin-side down over medium heat until golden. Flip, fry 4 mins. Check doneness with a chopstick (no blood = cooked).
  3. Heat oil, sauté garlic, shallots, dried/green chilies and rattan peppercorns until fragrant. Add wings, light soy sauce and sugar. Stir to serve.
