椒鹽炸粟米 Deep fried corn with pepper salt 中式食譜 粟米食譜 大排檔

每次去大排檔必點菜式❤️‍🔥超級香囗,配冰凍啤酒一流!餐廳會加鹹蛋黃,太邪惡所以今次沒有加😝之前都post過,今次加入英文食譜希望對大家有用🫶🏻

做法好簡單!最難反而是斬粟米😂我多數用滾水煮粟米,令粟米芯變淋再切,會易切好多🤓秘訣就是先將粟米打直放穩,再將刀插入粟米芯,由上往下切粟米,雙手壓菜刀落去就ok‼️建議用雙手拎刀,更加用到力而且避免切傷🥶

❤️‍🔥椒鹽炸粟米📝食譜
烹調時間⏱30分鐘

🔸材料🔸
粟米 2條
蒜頭 8瓣切碎
炸蒜 30g
紅蔥頭 1個切碎
椒鹽 12g
辣豆瓣醬 1茶匙 (可省略)
指天椒 1條切粒 (可省略)
紅尖椒 半條切絲 (可省略)
蔥 1棵切粒

🔹做法🔹

  1. 粟米折開一半,放入滾水煮6分鐘,合蓋熄火焗4分鐘
  2. 粟米先斬頭尾確保平坦;打直放穩,菜刀插入粟米,雙手將刀向下壓,切半;重複以上步驟,整條粟米切開八段
  3. 粟米印乾水份,拍上生粉;用半煎炸方式中火煮至金黃捲曲,盛起備用
  4. 下油開鍋,加入蒜粒和紅蔥頭碎拌炒;下辣豆瓣醬炒香,按口味加入指天椒和紅尖椒絲
  5. 加入椒鹽和粟米炒勻,下炸蒜繼續拌炒;熄火加入蔥花,上碟後撒上額外椒鹽即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

  • 2 corns
  • 8 cloves of garlic, minced
  • 30g fried garlic
  • 1 shallot, chopped
  • 12g seasoned salt
  • 1 tsp chili bean sauce (optional)
  • 1 chili pepper, diced (optional)
  • 1/2 red bell pepper, sliced (optional)
  • 1 spring onion, diced

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Boil the corn for 6 mins, cover and simmer for 4 minutes.
  2. Cut off the ends of the corn, slice it in half, repeat until the corn is cut into 8 pieces.
  3. Pat dry the corn and coat it with potato starch. Fry in wok until turning golden brown and crispy.
  4. Stir-fry minced garlic and chopped shallots in oil. Add chili bean sauce and chili peppers to taste.
  5. Add seasoned salt and corn to the wok, and continue stir-frying with fried garlic. Add springs onions and extra seasoned salt, serve immediately!
