港式咖喱薯仔炆雞翼 HK Style Curry Chicken Wings 中式食譜 茶餐廳

One of my fav dish!每次煮這道菜式,都要煮多碗飯,因為咖喱汁配上入味的薯仔,送飯實在太美味啦🥹

比起咖喱粉,我更喜歡用咖喱醬,因為已經用好多香料調配炒好,方便又香噴噴😗我配上印度薄餅食超正❤️‍🔥

🇭🇰港式咖喱薯仔炆雞翼📝食譜
烹調時間⏱45分鐘

🔸材料🔸
雞翼 10隻
薯仔 1個切件
甘荀 1條切片
洋蔥 1個切件
蒜頭 5瓣切碎
薑 5片
紹興花雕酒 1湯匙

🔸雞翼醃料🔸
生抽 2茶匙
老抽 1茶匙
蔴油 半茶匙
紹興花雕酒 1湯匙

🔸調味料🔸
咖喱醬 3湯匙
沙嗲醬 1湯匙
水 200ml
砂糖 半茶匙
椰奶 1罐165ml

🔹做法🔹

  1. 雞翼解凍,用醃料醃30分鐘;薯仔切粒浸水15分鐘
  2. 下油開鍋,放入薑片和雞翼,煎至兩邊金黃焦香,盛起;煎香薯仔備用
  3. 同一個鍋放入洋蔥和蒜粒炒勻;下咖喱醬和沙嗲醬小火炒至香味䆁出;加入雞翼、薯仔和甘筍,灒入紹興花雕酒
  4. 倒入清水,煮沸後合蓋小火煮30分鐘;加入椰奶,下砂糖調味,中火煮至醬汁濃稠即成

❣️不同牌子咖喱醬/沙茶醬味道不同,建議逐少添加試味

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Chicken wings, 10 pcs
Potato, 1 pc, diced
Carrot, 1 pc, sliced
Onion, 1 pc, sliced
Garlic, 5 cloves, minced
Ginger, 5 slices
Shaoxing Huadiao wine, 1 tbsp.

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Soy sauce, 2 tsp; Dark soy sauce, 1 tsp; Sesame oil, 1/2 tsp; Shaoxing Huadiao wine, 1 tbsp.

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Curry paste, 3 tbsp; Satay sauce, 1 tbsp; Water, 200ml; Sugar, 1/2 tsp; Coconut milk, 1 can (165ml)

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Thaw chicken wings and marinate with seasoning for 30 mins. Soak diced potatoes in water for 15 mins
  2. Heat oil in a pan, fry ginger slices and chicken wings until golden and fragrant. Set aside. Fry potatoes until cooked.
  3. In the same pan, stir-fry onions and minced garlic. Add curry paste and satay sauce, stir-fry until fragrant. Add chicken wings, potatoes, and carrot slices. Sprinkle with Shaoxing Huadiao wine.
  4. Pour in water, bring to a boil, then simmer covered over low heat for 30 mins. Add coconut milk and sugar, simmer until sauce thickens. Serve hot.
