🔸材料🔸(2人份)
花甲 1斤
粉絲 2包浸軟
蒜頭 1個切碎
辣豆瓣醬 2茶匙
紹興花雕酒 1湯匙
水 100ml
芫荽 3棵
蔥 1棵
🔸調味料🔸
生抽/老抽 各1茶匙
砂糖 半茶匙
魚露 半茶匙(可省略)

🔹做法🔹
- 花甲放入暖水浸泡,加入1茶匙鹽和1/3條指天椒,放陰暗處吐沙1小時
- 下油開鍋,加入蒜粒、蔥白和芫荽根炒香;下辣豆瓣醬炒至香味釋出
- 加入粉絲,灒入紹興花雕酒;加入清水和調味料炒勻
- 放上花甲,中火煮至冒煙後,合蓋小火煮3-4分鐘至熟,灑上蔥花即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Clams, 600g
Vermicelli , 2 packs, soaked
Garlic, 1 px, minced
Spicy bean paste, 2 tsp
Shaoxing wine, 1 sp
Water, 100ml
Cilantro, 3 sprigs
Scallions, 1 stalk
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Light soy sauce / dark soy sauce, 1 tsp each
Sugar, 1/2 tsp
Fish sauce, 1/2 tsp (optional)
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Soak clams in water with salt, chili, and sesame oil. Let sit to spit out sand for 1 hour
- Heat oil, stir-fry garlic, scallions, and cilantro roots. Add spicy bean paste and cook until fragrant.
- Add vermicelli, Shaoxing wine, water, and seasoning. Stir-fry to combine.
- Add clams, cook over medium heat until smoking, then simmer covered for 3-4 mins. Garnish with scallions.
