花生眉豆雞腳去濕湯 Chicken Feet Soup with Peanuts 中式食譜 湯水 春天 阹濕

春天去濕湯水🌧️材料好簡單,但非常香濃鮮甜!我額外加咗冬菇瑤柱😝煲雞腳湯會比較油,最後記得隔油!或者好似我咁用吸油紙❤️

💦花生眉豆雞腳去濕湯📝食譜
烹調時間⏱1.5小時

🔸材料🔸(4-6碗)
雞腳 10隻
排骨/瘦肉 300g
紅蘿蔔 1條切件
冬菇 4粒 (可省略)
瑤柱 5粒 (可省略)
花生 100g
眉豆 100g
蜜棗 3粒
陳皮 1塊浸軟去囊
水 2000ml

🔹做法🔹

  1. 花生眉豆浸15分鐘;冬菇瑤柱熱水浸軟
  2. 大鍋放入雞腳和排骨,注入清水;中小火煮至沸騰,繼續煮3分鐘,盛起沖洗血污
  3. 全部材料放入大鍋,煮沸後合蓋小火煮1.5小時即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (4–6 bowls)
Chicken feet 10
Pork ribs / lean pork 300g
Carrot 1, cut into pieces
Dried shiitake mushrooms 4 (optional)
Dried scallops 5 (optional)
Peanuts 100g
Hyacinth beans 100g
Honey dates 3
Dried tangerine peel 1 piece, soaked until soft and pith removed
Water 2000ml

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Soak beans and peanuts for 15 mins. Soak mushrooms and scallops in hot water.
  2. Put chicken feet and pork ribs into a large pot, add water, bring to the boil over medium-low heat and continue boiling for 3 minutes, then remove and rinse off impurities.
  3. Add all ingredients into the pot, bring to the boil, cover and simmer over low heat for 1.5 hours.
