今次食譜我沒有加太多調味,不想掩蓋話梅獨有的香味💖買到靚話梅好重要!特地去了間傳統老店買,好大粒好清甜!不同店舖話梅甜度唔同,所以浸之前一定要試味😆我額外加入少量白醋,酸酸的平衡話梅的甜味!

❄️話梅漬蕃茄仔📝食譜
烹調時間⏱15分鐘
🔸材料🔸
車厘茄 30粒
話梅 40g約5-8粒
冰糖 約50g
水 500ml
白醋 約半茶匙

🔹做法🔹
- 車厘茄洗淨,放入100度熱水浸1分鐘;立即撈起浸冰水,由頂部開始去皮
- 小鍋燒熱水,加入冰糖煮溶;放入話梅,小火合蓋煮10分鐘出味,加入白醋試味,放涼
- 加入車厘茄放雪櫃浸至少12小時,即可享用



𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Cherry tomatoes 30 px
Preserved Plum 40g about 5-8 px
Rock Sugar ~50g
Water 500ml
White Vinegar ~1/2 tsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Wash the cherry tomatoes and soak them in 100-degree hot water for 1 min. Immediately remove them and put them in ice water. Peel them starting from the top.
- Heat water in a small pot and dissolve the rock sugar. Add the preserved plums and simmer on low heat for 10 mins. Add white vinegar to taste and let it cool.
- Add the cherry tomatoes and refrigerate for at least 12 hours before serving.
