話梅漬蕃茄仔 Cherry Tomatoes with Sour Plums 中式食譜 涼拌小菜 素食

前幾日post中式大餐,好多人對梅漬蕃茄仔有興趣!快手寫食譜分享❤️‍🔥呢這個涼拌菜味道好有驚喜,蕃茄味道和話梅好夾,朋友都好喜歡😙雪凍更加好味,冰冰涼涼,食完特別開胃解膩!最正是可以預早準備,好適合用來宴客✨

今次食譜我沒有加太多調味,不想掩蓋話梅獨有的香味💖買到靚話梅好重要!特地去了間傳統老店買,好大粒好清甜!不同店舖話梅甜度唔同,所以浸之前一定要試味😆我額外加入少量白醋,酸酸的平衡話梅的甜味!

❄️話梅漬蕃茄仔📝食譜
烹調時間⏱15分鐘

🔸材料🔸
車厘茄 30粒
話梅 40g約5-8粒
冰糖 約50g
水 500ml
白醋 約半茶匙

🔹做法🔹

  1. 車厘茄洗淨,放入100度熱水浸1分鐘;立即撈起浸冰水,由頂部開始去皮
  2. 小鍋燒熱水,加入冰糖煮溶;放入話梅,小火合蓋煮10分鐘出味,加入白醋試味,放涼
  3. 加入車厘茄放雪櫃浸至少12小時,即可享用

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Cherry tomatoes 30 px
Preserved Plum 40g about 5-8 px
Rock Sugar ~50g
Water 500ml
White Vinegar ~1/2 tsp

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Wash the cherry tomatoes and soak them in 100-degree hot water for 1 min. Immediately remove them and put them in ice water. Peel them starting from the top.
  2. Heat water in a small pot and dissolve the rock sugar. Add the preserved plums and simmer on low heat for 10 mins. Add white vinegar to taste and let it cool.
  3. Add the cherry tomatoes and refrigerate for at least 12 hours before serving.
