簡易家庭版!跟餐廳味道一樣!之前post過食譜好多人整過回圖好喜歡,絕對是信心保證😎我不太吃酸菜,所以這個是少酸版!額外加入番茄增加天然酸味🥰喜歡更加酸可以增加白醋和酸菜份量!

❤️🔥簡易小鍋米線📝食譜
烹調時間⏱30分鐘
🔸材料🔸(2人份)
米線 300g
免治豬肉 230g
酸菜 70g切粒
番茄 1個切粒
蒜頭 4瓣切碎
辣豆瓣醬 3-4茶匙
雞湯 500ml
水 350ml
花椒油/ 生抽/砂糖 各1茶匙
白醋 1湯匙
鮮腐竹 2條切段
芽菜 100g
韭菜 60g
芫荽/蔥
🔸醃料🔸
生抽 /紹興花雕酒/生粉/ 花椒油 各1茶匙
胡椒粉 適量

🔹做法🔹
- 免治豬肉用醃15分鐘;新鮮米線不用汆水,如用乾米線,放入滾水煮熟瀝乾
- 下油開鍋,炒香蒜粒和免治豬肉;下辣豆瓣醬炒至出油;加入番茄炒至軟身,放入酸菜粒;倒入雞湯和清水,煮沸合蓋小火煮10分鐘
- 加入花椒油、白醋、砂糖和生抽,試味;放入米線、韭菜、鮮腐竹和芽菜煮熟,灑上芫茜和蔥花即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
300g rice noodles
230g minced pork
70g pickled mustard greens, diced
1 tomato, diced
4 cloves garlic, minced
3-4 tsp spicy bean paste
500ml chicken broth
350ml water
1 tsp each of Sichuan pepper oil, soy sauce, and sugar
1 tbsp white vinegar
2 px of fresh yuba, 100g bean sprouts, 60g chives
Cilantro/scallion
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tsp each of soy sauce, Shaoxing wine, cornstarch, and Sichuan pepper oil

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Marinate minced pork for 15 min. No need to blanch fresh rice noodles; if dried, boil in water and drain
- Sauté minced garlic and pork until fragrant. Add spicy bean paste; stir-fry. Mix in diced tomato, cook until soft, add pickled mustard greens. Pour in chicken broth and water, bring to a boil, cover, simmer on low for 10 min.
- Add Sichuan pepper oil, vinegar, sugar, and soy sauce; adjust seasoning. Stir in rice noodles, chives, fresh yuba, and bean sprouts; cook until done. Garnish with cilantro and scallion
