特濃蕃茄滑蛋牛肉刀削麵 Tomato Beef Noodles with Eggs 刀削麵食譜 中式食譜 粉麵食譜

放工簡易one pot meal💕蕃茄+牛肉+蛋是絕配呀😚要煮到像餐廳般又濃又杰的湯底,做法不外乎加大量蕃茄攪碎加糖,或者加好多生粉水🙈我的做法是簡化版😛用罐裝蕃茄,方便又好味!

今次用了肥牛片,不用醃肉又唔怕口感變靭🥰一鍋到底快靚正呀!

❤️‍🔥特濃蕃茄滑蛋牛肉刀削麵📝食譜
烹調時間⏱30分鐘

🔸材料🔸 (2人份)
刀削麵/ 任何麵條 250g
肥牛片 200g
雞蛋 3隻拌勻
罐裝番茄 1罐400g壓蓉
車厘茄 12粒切半 (可省略)
水 500ml
乾蔥 3粒切片
蒜頭 4粒切碎
茄膏 2茶匙
生抽 1茶匙
砂糖 約2茶匙
鹽, 芫茜/蔥

🔹做法🔹

  1. ▪️處理刀削麵▪️水滾放入刀削麵,中火煮3-4分鐘後撈起,沖水過冷河,瀝乾備用
  2. ▪️預備食材▪️平底鍋下油,加入蛋液煮熟,切件
  3. 同一個鍋下肥牛片煎至半熟,盛起備用
  4. ▪️煮湯底▪️同一個鍋加入乾蔥和蒜粒拌炒;下茄膏炒香,加入車厘茄至軟淋出汁
  5. 倒入罐裝番茄和水,煮沸後合蓋小火煮15分鐘;下生抽、鹽和砂糖調味
  6. 放入刀削麵,中火煮至湯底濃稠;加入肥牛片,熄火放上炒蛋、芫荽和蔥花即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Noodles 250g
Beef slices 200g
3 eggs, beaten
1 can of crushed tomatoes (400g)
12 cherry tomatoes, halved (optional)
500ml water
3 slices of dried shallots
4 cloves of garlic, minced
2 tsp of tomato paste
1 tsp of soy sauce
Approx. 2 tsp of sugar
Salt, cilantro/scallions

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. ▪️Cook noodles▪️ Boil and cook noodles for 3-4 mins. Rinse and drain.
  2. ▪️Prepare ingredients▪️ Cook beaten eggs in oil, then cut into pieces.
  3. Sear beef slices in skillet, set aside.
  4. ▪️Make soup base▪️ Sauté shallots and garlic. Add tomato paste, cherry tomatoes, cook until soft.
  5. Add crushed tomatoes and water. Simmer for 15 mins. Season with soy sauce, salt, and sugar.
  6. Add noodles, cook until broth thickens. Add beef slices. Garnish with eggs, cilantro, and scallions. Serve.
