🫶🏻洋蔥薯仔炆雞翼📝食譜
烹調時間⏱45分鐘
🔸材料🔸(2人份)
雞翼 8隻
薯仔 1個切件
甘荀 1條切片
洋蔥 1個切片
乾蔥 2粒切片
蒜頭 4瓣切粒
薑 3片
紹興花雕酒 1湯匙
生粉水 50ml水+1湯匙生粉
🔸醃料🔸
生抽 1茶匙, 麻油 半茶匙, 薑 4片, 蔥 半棵切段
🔸調味料🔸
水 150ml
蠔油 2湯匙
生抽 2茶匙
老抽 1茶匙
糖 1茶匙

🔹做法🔹
- 雞翼解凍,用粗鹽沖洗去除雪味;醃料醃雞翼30分鐘
- 薯仔切件,浸水15分鐘除去澱粉質,用盡廚房紙吸乾水份;下油開鍋,加入薯仔煎至表面金黃,盛起
- 同一個鍋下洋蔥、乾蔥、蒜粒和蔥白炒香,加入雞翼、薯仔和甘荀,灒入紹興花雕酒炒勻
- 倒入調味料,煮沸後合蓋小火煮10分鐘;下生粉水煮至湯汁濃稠,加入蔥段炒勻即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Chicken wings 8 pcs
Potato 1 pc, sliced
Carrot 1 pc, sliced
Onion 1 pc, sliced
Dried shallots 2 cloves, sliced
Garlic 4 cloves, minced
Ginger 3 slices
Shaoxing wine 1 sp
Potato starch water 50ml water + 1 sp potato starch
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Soy sauce 1 tsp, sesame oil 1/2 tsp, ginger 4 slices, scallion 1/2 stalk, cut into segments.
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Water 150ml, Oyster sauce 2 sp, Soy sauce 2 tsp, Dark soy sauce 1 tsp, Sugar 1 tsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Thaw chicken wings, rinse with salt, marinate for 30 mins.
- Soak potatoes, pat dry, fry until golden, set aside.
- Stir-fry onion, shallots, garlic, scallion whites. Add wings, potatoes, carrot, sprinkle Shaoxing wine, stir-fry.
- Add seasoning, boil, simmer covered for 10 mins. Add water starch, thicken sauce. Stir in scallion, serve.
