泰式菠蘿炒飯 Thai Pineapple Fried Rice 泰式食譜

簡化版recipe!! 配上昨天post的飛天通菜,屋企都煮到色香味俱全的泰國餐🙂‍↕️

自己整好簡單,又可以用新鮮菠蘿❤️‍🔥原個菠蘿直接上桌特別吸睛,而且好適合宴客party煮呀😚

🍍泰式菠蘿炒飯📝食譜
烹調時間⏱30分鐘

🔸材料🔸(2人份)
白飯 2碗
菠蘿 1個
雞蛋 2隻
去皮雞脾扒 2塊切粒
蝦仁 8隻
提子乾、腰果、豬肉鬆 (可省略)

🔸醃料🔸
生抽 1茶匙, 咖喱粉 1茶匙

🔸調味料🔸
咖喱粉 約2茶匙
薑黃粉 半茶匙
魚露 1茶匙
生抽 1茶匙
椰糖/ 砂糖 半茶匙

🔹做法🔹

  1. ▪️預備食材▪️菠蘿直放,如圖把三分一部份切開;另外一邊在果肉𠝹井字,用匙羹挖出菠蘿肉,廚房紙吸乾菠蘿的水份;雞粒和蝦用醃料醃15分鐘
  2. ▪️烹調▪️下油開鍋,分別煎香腰果,雞粒和蝦,盛起備用
  3. 下油開鑊,倒入蛋液,中間拌入米飯,大火快手炒至粒粒分明;加入調味料和配料,試味
  4. 下菠蘿肉炒勻,倒入菠蘿;放上提子乾和肉鬆即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 bowls of white rice
1 pineapple
2 eggs
2 px skinless chicken thigh, diced
8 prawns
Dried grapes, cashews, and pork floss (optional)

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tsp soy sauce, 1 tsp curry powder

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
2 tsp curry powder
½ tsp turmeric powder
1 tsp fish sauce and soy sauce
½ tsp coconut sugar or granulated sugar
Salt

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Cut off one third of the pineapple and scoop out the flesh. Marinate chicken and shrimp for 15 mins
  2. In a pan, fry cashews, chicken, and shrimp separately, then set aside
  3. Stir-fry eggs in the pan, add rice, and cook on high heat until grains separate. Mix in seasonings and other ingredients
  4. Add pineapple meat and juice, then top with dried grapes and pork floss.
