🍍泰式菠蘿炒飯📝食譜
烹調時間⏱30分鐘
🔸材料🔸(2人份)
白飯 2碗
菠蘿 1個
雞蛋 2隻
去皮雞脾扒 2塊切粒
蝦仁 8隻
提子乾、腰果、豬肉鬆 (可省略)
🔸醃料🔸
生抽 1茶匙, 咖喱粉 1茶匙
🔸調味料🔸
咖喱粉 約2茶匙
薑黃粉 半茶匙
魚露 1茶匙
生抽 1茶匙
椰糖/ 砂糖 半茶匙
鹽

🔹做法🔹
- ▪️預備食材▪️菠蘿直放,如圖把三分一部份切開;另外一邊在果肉𠝹井字,用匙羹挖出菠蘿肉,廚房紙吸乾菠蘿的水份;雞粒和蝦用醃料醃15分鐘
- ▪️烹調▪️下油開鍋,分別煎香腰果,雞粒和蝦,盛起備用
- 下油開鑊,倒入蛋液,中間拌入米飯,大火快手炒至粒粒分明;加入調味料和配料,試味
- 下菠蘿肉炒勻,倒入菠蘿;放上提子乾和肉鬆即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 bowls of white rice
1 pineapple
2 eggs
2 px skinless chicken thigh, diced
8 prawns
Dried grapes, cashews, and pork floss (optional)
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tsp soy sauce, 1 tsp curry powder
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
2 tsp curry powder
½ tsp turmeric powder
1 tsp fish sauce and soy sauce
½ tsp coconut sugar or granulated sugar
Salt
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Cut off one third of the pineapple and scoop out the flesh. Marinate chicken and shrimp for 15 mins
- In a pan, fry cashews, chicken, and shrimp separately, then set aside
- Stir-fry eggs in the pan, add rice, and cook on high heat until grains separate. Mix in seasonings and other ingredients
- Add pineapple meat and juice, then top with dried grapes and pork floss.
