🇹🇼台式香菇肉燥拌麵📝食譜
烹調時間⏱45分鐘

🔸材料🔸(2人份)
刀削麵 250g
免治豬肉 240g
冬菇 5粒
浸冬菇水 250ml
蒜頭 4瓣切碎
乾蔥 2粒切絲
生粉水 50ml (1湯匙生粉+50ml水)
甘荀/雞蛋/小棠菜

🔸醃料🔸
生抽 1湯匙, 胡椒粉

🔸調味料🔸
八角 1粒
香葉 1片
生抽 1茶匙
老抽 1茶匙
蠔油 1湯匙
砂糖 1茶匙

🔹做法🔹

  1. 免治豬肉醃30分鐘;熱水浸軟冬菇,切粒,浸冬菇水備用
  2. 雞蛋放入沸水煮12分鐘,剝殼備用;刀削麵煮熟
  3. 白鑊炒香八角和香葉;倒入油,下蒜粒和乾蔥粒拌炒至香味䆁出
  4. 加入免治豬肉炒至粒粒分明,下冬菇粒,倒入浸冬菇水和其餘調味料,中火煮沸後,加入雞蛋,合蓋小火煮10分鐘
  5. 倒入生粉水,中火煮至湯汁濃稠,淋上刀削麵即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Noodles 250g
Ground pork 240g
Shiitake mushrooms 5 px
Soak mushrooms water 250ml
4 cloves of garlic, minced
2 shallots, sliced
50ml potato starch water (1 tablespoon potato starch + 50ml water)
Carrots/eggs/baby bok choy

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Light soy sauce 1 sp, pepper

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Star anise 1 pc, Bay leaf 1 leaf
Light soy sauce 1 tsp, Dark soy sauce 1 tsp, Oyster sauce 1 tbsp
Sugar 1 tsp

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Marinate the ground pork. Soak and dice shiitake mushrooms, reserve the soaking liquid.
  2. Boil eggs for 12 mins, then peel. Cook the noodles.
  3. Sauté star anise and bay leaf. Add oil, minced garlic, and sliced shallots. Stir-fry.
  4. Add ground pork, cooked mushrooms, soaked mushroom water, and remaining seasonings. Bring to a boil. Add eggs and simmer covered for 10 minutes.
  5. Add starch water and simmer until thickened. Serve over noodles.
