🤎台式香菇肉燥飯📝食譜
烹調時間⏱30分鐘

🔸材料🔸(2人份)
免治豬肉 300g
冬菇 6粒
浸冬菇水 300ml
蒜頭 4瓣切碎
乾蔥 2粒切絲
八角 1粒
香葉 1片
生粉水 50ml (1湯匙生粉+50ml水)
雞蛋/小棠菜

🔸醃料🔸
生抽 1湯匙, 胡椒粉

🔸調味料🔸
生抽 1茶匙, 老抽 1茶匙, 蠔油 1湯匙, 砂糖 1茶匙

🔹做法🔹

  1. 冬菇前一晚放雪櫃浸軟,切粒;免治豬肉醃30分鐘;雞蛋放入沸水煮12分鐘,剝殼備用
  2. 白鑊烘香八角和香葉;倒入油,下蒜粒和乾蔥粒炒香
  3. 加入免治豬肉炒碎,下冬菇粒炒勻;倒入浸冬菇水和調味料,中火煮沸;加入雞蛋合蓋小火煮10分鐘
  4. 倒入生粉水,中火煮至湯汁濃稠,淋上白飯即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2-3)
300g minced pork
6 dried shiitake mushrooms
300ml soak mushroom water
4 cloves of garlic, minced
2 shallots, sliced
1 star anise
1 bay leaf
50ml cornstarch slurry (1 tbsp cornstarch + 50ml water)
Eggs/ baby bok choy

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tbsp soy sauce, white pepper

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
1 tsp soy sauce, 1 tsp dark soy sauce, 1 tbsp oyster sauce, 1 tsp sugar

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Soak dried shiitake mushrooms overnight in the refrigerator, chop. Marinate minced pork for 30 mins. Boil eggs for 12 mins, peel, and set aside.
  2. Toast star anise and bay leaf in a dry pan. Add oil, sauté minced garlic and shallots until fragrant.
  3. Stir-fry minced pork, add chopped mushrooms. Pour in soaked mushroom water and seasoning; bring to a boil. Add eggs, cover, and simmer on low for 10 minutes.
  4. Stir in cornstarch slurry and cook until the sauce thickens. Serve over white rice.
