🫶🏻菜脯肉碎蒸豆腐📝食譜
烹調時間⏱15分鐘

🔸材料🔸
滑豆腐 1盒
免治豬肉 200g
甜菜脯 30g切粒
老抽 1-2茶匙
生粉水 1湯匙生粉+150ml水
蔥、芫荽、指天椒

🔸豬肉醃料🔸
生抽 1茶匙
麻油 半茶匙
紹興花雕酒 1茶匙
胡椒粉

🔹做法🔹

  1. 免治豬肉醃30分鐘
  2. 滑豆腐切片,蒸5分鐘,倒走多餘水份
  3. 下油開鍋,炒香菜脯;加入免治豬肉炒至粒粒分明;倒入老抽和生粉水中火拌炒至濃稠,淋上豆腐,灑上蔥花即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Tofu – 1 box
Ground pork – 200g
Pickled beetroot – 30g, diced
Dark soy sauce – 1-2 tsp
Starch water – 1 tbsp cornstarch + 150ml water
Scallions, cilantro, chili peppers

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Light soy sauce: 1 tsp
Sesame oil: 1/2 tsp
Shaoxing Huadiao wine: 1 tsp
Ground pepper

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Marinate ground pork for 30 mins.
  2. Slice and steam silken tofu for 5 mins, then drain.
  3. Stir-fry preserved radish until fragrant. Add marinated ground pork and stir-fry until cooked. Add seasonings and stir-fry until thickened.
  4. Pour mixture over tofu, sprinkle with green onions, and serve.
