🫶🏻蓮藕粟米蒸肉餅📝食譜
烹調時間⏱10分鐘
🔸材料🔸
免治梅頭豬肉 300g (3成肥)
蓮藕 80g去皮切粒
粟米粒 60g
油 1茶匙
🔸醃料🔸
水 4湯匙
生粉 2茶匙
生抽 2茶匙
花雕紹興酒 1茶匙
蠔油 1茶匙
麻油 半茶匙
砂糖 1茶匙
蛋白 1湯匙 (可省略)
胡椒粉

🔹做法🔹
- 免治豬肉先加生粉水攪勻吸收水份,加入其餘豬肉醃料;向同一方向拌勻至起膠,最後加入油鎖住水份
- 加入蓮藕粒和粟米粒混合,鋪上大碟,醃30分鐘
- 大火蒸10分鐘,灑上蔥花即成;可按口味加入甜豉油

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Ground pork loin (30% fat) 300g
Lotus root 80g, peeled and diced
Corn kernels 60g
Oil 1 tsp
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Water 4 tablespoons
Cornstarch 2 tsp
Soy sauce 2 tsp
Shaoxing wine 1 tsp
Oyster sauce 1 tsp
Sesame oil ½ tsp
Sugar 1 tsp
Egg white 1 tbsp (optional)
Pepper
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Combine ground pork with cornstarch and water until absorbed. Add marinade ingredients and stir until sticky, then mix in oil.
- Mix in diced lotus root and corn, spread on a plate, and marinate for 30 mins.
- Steam on high for 10 mins, garnish with scallions, serve with sweet soy sauce if desired.
