🦪特濃忌廉煙肉廣島蠔意粉📝食譜
烹調時間⏱20分鐘
🔸材料🔸(2人份)
意粉 180g
蠔 8-10隻
煙肉粒 70g
小啡菇 1盒200g
菠菜苗 100g
乾蔥 2粒切碎
鮮奶 200ml
淡忌廉 100ml
無鹽牛油 1茶匙
鹽、黑胡椒碎

🔹做法🔹
- 蠔沖水解凍,用生粉水浸15分鐘後,擦洗去污;用廚房紙印乾水份
- 冷鍋下煙肉粒,小火煎至脆身油份䆁出,盛起部份煙肉粒備用
- 同一個鍋下乾蔥炒軟,加入小啡菇中火炒至焦香
- 倒入鮮奶,煮沸後合蓋小火煮5分鐘;加入蠔煮約3分鐘至熟,盛起備用
- 下意粉、菠菜苗和牛油炒勻,倒入淡忌廉煮至濃稠;下鹽、黑胡椒碎調味,鋪上蠔和煙肉粒即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Spaghetti 180g
Oysters 8-10 px
Pancetta 70g
Mushrooms 1 box (200g)
Baby spinach 100g
Shallots 2 pieces, chopped
Milk 200ml
Whipping cream 100ml
Unsalted butter 1 tsp
Salt, ground black pepper
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Thaw and clean the oysters by soaking them in a cornstarch solution for 15 mins, pat them dry
- In a cold pan, cook the pancetta over low heat until crispy. Set aside
- In the same pan, sauté the shallots until soft, then add the mushrooms and cook until fragrant.
- Pour in milk, bring to a boil, and simmer for 5 mins. Add the oysters and cook for 3 mins until cooked. Set aside.
- Stir-fry the spaghetti, baby spinach, and butter. Pour in whipping cream and cook until thickened. Season with salt and black pepper. Top with oysters and pancetta
