🍋白酒檸檬煮黃蟶子📝食譜
烹調時間⏱15分鐘

🔸材料🔸
黃蟶子 1斤
蒜頭 10瓣切片
橄欖油 50ml
Vinho Verde/白酒 150ml
檸檬汁 1茶匙
芫荽 3棵
無鹽牛油 1湯匙
黑胡椒碎

🔹做法🔹

  1. 黃蟶子放入40度溫水浸10分鐘,沖洗外殼;切出芫荽根,芫荽莖切段,芫荽葉切碎
  2. 下橄欖油開鍋,煎香蒜片至金黃;加入芫荽根和芫荽莖炒勻出味,倒入白酒煮沸
  3. 放入黃蟶子,合蓋小火煮2-3分鐘至開口;下牛油炒勻,加入檸檬汁,撒上芫荽葉和黑胡椒碎即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Razor Clams (Huang Chan Zi): 1 catty (approx. 600g)
Garlic: 10 cloves, sliced
Olive Oil: 50ml
Vinho Verde/White Wine: 150ml
Lemon Juice: 1 teaspoon
Cilantro: 3 sprigs
Unsalted Butter: 1 tablespoon
Freshly Ground Black Pepper

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Soak razor clams in warm water (40°C) for 10 mins, then rinse. Trim cilantro roots, slice stems, and chop leaves.
  2. Heat olive oil in a pan and sauté garlic until golden. Add cilantro roots and stems, stir-fry until fragrant, then add white wine and bring to a boil.
  3. Add razor clams, cover, and simmer on low for 2-3 mins until they open. Stir in butter, add lemon juice, and sprinkle with cilantro leaves and black pepper. Serve immediately.
