今次學餐廳先用砂鍋加蟹粉煮黃金飯,然後將蟹粉淋面!最後加熱煮飯焦,儀式感十足呀❤️🔥

🌟蟹粉鍋飯📝食譜
烹調時間⏱30分鐘
🔸材料🔸
米 250g
水 250ml
已調味大閘蟹粉 300g
蔥
🔹做法🔹
- 砂鍋加入70g蟹粉炒香,放入白米炒勻;倒入清水,中火煮至微滾 (呈魚眼泡,期間用筷子攪拌防黏) ;合蓋小火煮20分鐘,熄火焗10分鐘
- 平底鍋加入剩餘的蟹粉,小火拌炒至出油,可倒入額外浸蔥水煮至濃稠,淋上飯面;混合均勻,合蓋中火煮1-2分鐘成飯焦,即可享用

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Rice: 250g
Water: 250ml
Seasoned hairy crab paste: 300g
Scallions
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Heat clay pot, stir-fry 70g crab paste until fragrant. Add rice, mix. Pour water, bring to a gentle boil (fish-eye bubbles) over medium heat, stir occasionally. Cover, simmer on low for 20 mins, then off heat and stand covered for 10 mins.
- In a pan, stir-fry remaining crab paste on low until oily. Add scallion-soaked water, cook until thick. Drizzle over rice, mix. Cover, cook on medium for 1-2 mins until crispy. Serve hot.
