雞翼 8隻
花膠 (用冷水浸發) 1-2片
冬菇 6粒浸軟
蒜頭 4粒
薑 3片
乾蔥 2粒切件

🔸調味料🔸
淘大翕仔頭遍生抽 2湯匙
雞湯 300ml
冰糖 1茶匙
生粉水 100ml水+1湯匙生粉

🔸醃料🔸
淘大翕仔頭遍生抽 2茶匙

🔹做法🔹

  1. 雞翼用淘大翕仔頭遍生抽醃至少30分鐘
  2. 下油開鍋,放入雞翼煎至兩面金黃,盛起;同一個鍋放入薑、乾蔥和蒜頭炒香,加入冰糖、冬菇和花膠炒勻
  3. 倒入雞湯和淘大翕仔頭遍生抽,放入雞翼;中火煮沸後合蓋小火煮30分鐘

  • 8 chicken wings
  • 1-2 pc of dried fish maw (soaked in cold water)
  • 6 dried shiitake mushrooms (soaked until soft)
  • 4 cloves of garlic
  • 3 slices of ginger
  • 2 dried shallots (sliced)
  • 300 ml chicken broth
  • 1 teaspoon rock sugar
  • 100 ml starch water (100 ml water + 1 tbsp starch)

𝗦𝗮𝘂𝗰𝗲

  • 2 tablespoons of Amoy soy sauce
  • 300 ml chicken broth

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲

  • 2 teaspoons of Amoy soy sauce

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Marinate chicken wings in Amoy soy sauce for 30 mins.
  2. Heat oil in a pan, fry wings until golden, then set aside. In the same pan, sauté ginger, dried shallots, and garlic until fragrant. Add rock sugar, shiitake mushrooms, and fish maw; stir well.
  3. Pour in chicken broth and Amoy soy sauce, add wings, and bring to a boil. Cover and simmer on low for 30 mins.
  4. Add starch water and cook until sauce thickens. Garnish with chopped scallions before serving.
