黃金烏魚子大蜆意粉 Bottarga Clams Pasta 西式食譜

加咗烏魚子,成個菜式高級咗好多🥹要煮到掛汁嘅意粉,秘訣就係意粉唔好煮到全熟!先煮滾蜆汁,再加意粉入去煮!煮熟嘅過程會䆁出澱粉質,令醬汁濃厚creamy🥰

P.S. 呢隻烏魚子係上年喺台灣買嘅,隔咗大半年先出post🙈香港網上超市都有得買!

💛黃金烏魚子大蜆意粉📝食譜
烹調時間⏱30分鐘

🔸材料🔸
任何意粉 200g
蜆 600g
烏魚子 50g
蒜頭 6瓣切片, 2瓣磨蓉
白酒 100ml
意粉水 50ml
無鹽牛油 1湯匙
蕃茜 2棵

🔹做法🔹

  1. 大蜆放入溫水,下半茶匙鹽、1/4條指天椒和半茶匙麻油,放陰暗處吐沙30分鐘;烏魚子撕走外膜,磨碎
  2. 大鍋加水和1茶匙鹽煮沸,放入意粉,跟包裝建議煮的時間少2分鐘煮熟,瀝乾水備用
  3. 下橄欖油開鍋,加入蒜片和蕃茜莖;小火煎至蒜片金黃
  4. 放入大蜆,倒入白酒和意粉水,煮沸後合蓋中火煮約3分鐘;蜆開口立即取出,避免過熟
  5. 加入意粉、牛油和一半烏魚子,煮至湯汁濃稠後熄火;加入蕃茜碎和蜆肉拌勻,灑上烏魚子即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
200g any pasta
600g clams
50g mullet roe
6 garlic cloves (sliced), 2 garlic cloves (minced)
100ml white wine
50ml pasta water
1 tbsp unsalted butter
2 sprigs parsley

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Soak clams in warm water with ½ tsp salt, ¼ bird’s eye chili, and ½ tsp sesame oil in a dark place for 30 mins to remove sand. Peel the mullet roe and grate it.
  2. Bring a large pot of water with 1 tsp salt to a boil. Cook pasta 2 mins less than the package instructions, then drain.
  3. Heat olive oil in a pan. Sauté sliced garlic and parsley stems over low heat until golden.
  4. Add clams, white wine, and pasta water. Bring to a boil, cover, and cook over medium heat for about 3 mins. Remove clams as soon as they open to avoid overcooking.
  5. Add pasta, butter, and half the grated mullet roe. Cook until the sauce thickens, then turn off the heat. Stir in chopped parsley and clams. Top with the remaining mullet roe and serve.
