🧀特濃番茄和牛芝士焗飯📝食譜
烹調時間⏱30分鐘
🔸材料🔸
熊本縣產番茄 1盒5個切粒
和牛片 250g
洋蔥 半個切粒
水 200ml
已煮熟白飯 2碗
雞蛋 2隻
日式醬油 1茶匙
味醂 1茶匙
Mozzarella芝士碎 70g
百里香Thyme (可省略)
🔸麵糊材料🔸
低筋麵粉 1湯匙
牛油 1湯匙
🔹做法🔹
1. ▪️製作麵糊▪️煮溶牛油/微波爐熱溶牛油,加入麵粉攪拌均勻
2. 下油開鍋,放入和牛片煎至半熟,盛起備用
3. 同一個鍋下洋蔥粒炒軟,加入番茄炒勻,倒入清水煮沸後合蓋小火煮15分鐘
4. 先盛起一部份番茄用作擺盤,其餘番茄壓蓉,加入日式醬油、味醂和百里香;下鹽、黑胡椒碎;加入麵糊中火煮至湯汁濃稠,加入和牛炒勻
5. ▪️炒飯▪️2隻蛋拌勻,加入鹽和胡椒粉;下油開鍋,加入白飯,倒入蛋漿炒至每粒米飯都沾滿蛋汁,炒至乾身後放入焗盤
6. 炒飯鋪上和牛和番茄醬汁,放上番茄粒擺盤,灑上芝士碎,180焗約8分鐘至焦香即成
Ingredients:
1 box (5 pieces) of diced Kumamoto-grown tomatoes
250g of beef slices
Half an onion, diced
200ml of water
2 bowls of cooked white rice
2 eggs
1 teaspoon of Japanese soy sauce
1 teaspoon of mirin
70g of shredded Mozzarella cheese
Thyme (optional)
Batter ingredients:
1 tablespoon of low-gluten flour
1 tablespoon of butter
Instructions:
1. Prepare the roux by boiling/ melting the butter in microwave and mixing it with flour until smooth, set aside
2. Heat a pan with oil and cook the beef slices until half done, then set aside.
3. In the same pan, cook the onion until soft and add the tomatoes. Pour in the water and simmer for 15 minutes with the lid on with low heat.
4. Set aside some diced tomatoes for garnishing and puree the rest. Add soy sauce, mirin, and thyme to the puree, as well as salt and black pepper. Add the roux and cook until the sauce thickens, then add the cooked beef and mix well
5. Beat the 2 eggs with salt and black pepper, then heat a pan with oil and cook the beaten eggs. Add the cooked rice and stir until dry, transfer to a baking dish.
6. Spread the beef and tomato sauce over the fried rice and garnish with diced tomatoes. Sprinkle shredded cheese on top and bake at 180°C for about 8 minutes until crispy
