❤️‍🔥冬蔭功大蝦捲捲意粉📝食譜
烹調時間⏱20分鐘

🔸材料🔸(2人份)
意粉 180g
大蝦 6-8隻
車厘茄 10粒切半
乾蔥 2粒切碎
蒜頭 4粒切碎
香茅 1條拍扁切段
冬蕯功醬 約3茶匙
茄膏 1湯匙 (可省略)
椰漿 200ml
魚露 半茶匙
青檸 1個
羅勒 1棵 (可省略)

🔹做法🔹

  1. 大鍋加水和1茶匙鹽煮沸,放入意粉,跟包裝建議煮的時間少2分鐘煮熟,瀝乾水備用
  2. 大蝦用鹽和黑胡椒醃15分鐘
  3. 下油開鍋,煎大蝦至兩邊金黃,盛起;同一個鍋加入乾蔥和蒜頭碎炒香,加入香茅和車厘茄拌炒,下冬蔭膏醬和茄膏炒香
  4. 倒入椰漿,下魚露調味;加入意粉和羅勒葉炒勻;鋪上大蝦,擠上青檸汁,灑上黑胡椒碎即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Any pasta 180g
Prawns 6–8 pcs
Cherry tomatoes 10 pcs, halved
Shallots 2 pcs, chopped
Garlic 4 cloves, minced
Lemongrass 1 stalk, lightly crushed and cut into sections
Tom Yum paste approx. 3 tsp
Tomato paste 1 tsp (optional)
Coconut milk 200ml
Fish sauce ½ tsp
Lime 1 pc
Basil 1 sprig (optional)

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Bring a large pot of water with 1 tsp salt to the boil. Cook pasta 2 minutes less than the package instructions, drain and set aside.
  2. Marinate prawns with salt and black pepper for 15 mins.
  3. Heat oil in a pan. Fry prawns until golden on both sides, remove. In the same pan, sauté shallots and garlic until fragrant. Add lemongrass and cherry tomatoes, then stir in Tom Yum paste and tomato paste.
  4. Pour in coconut milk and season with fish sauce. Add pasta and basil, toss well. Top with prawns, squeeze lime juice, and sprinkle with black pepper. Done!
