🌹香煎牛扒伴忌廉蘑菇醬📝食譜
烹調時間⏱30分鐘

🔸材料🔸(2人份)
牛扒 1塊
意粉 200g
無鹽牛油 1湯匙
白蘑菇 200g
洋蔥 半個切碎
蒜頭 4瓣磨蓉
白蘭地/白酒 50ml
牛高湯/雞湯 100ml
淡忌廉 200ml
第戎芥末醬 3茶匙
迷迭香 1棵

🔹做法🔹

  1. 牛扒放室溫30分鐘
  2. 大鍋加水和1茶匙鹽煮沸,放入意粉,跟包裝建議煮的時間少30秒煮熟,瀝乾水備用
  3. 下牛油開鍋,炒香洋蔥至熟,加入蒜蓉和蘑菇炒至軟身;倒入白蘭地,大火煮至酒精揮發
  4. 倒入高湯煮沸,轉小火加入淡忌廉和芥末醬,煮至濃稠,下鹽調味即成
  5. 牛扒灑上鹽、黑胡椒碎;預熱鐵鍋,放入牛扒中火煎約90秒,翻面再煎90秒(時間視乎厚度),淋上牛油迷迭香,煎封牛扒側面,放上網架靜置5分鐘,切件;同一個鍋下配菜煎熟
  6. 大碟放上牛扒、配菜和意粉,淋上忌廉蘑菇醬即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (serves 2)
Steak – 1 piece
Spaghetti – 200g
Unsalted butter – 1 tablespoon
White mushrooms – 200g
Onion – half, chopped
Garlic – 4 cloves, minced
Brandy/white wine – 50ml
Beef broth/chicken broth – 100ml
Whipping cream – 200ml
Dijon mustard – 3 tsp
Rosemary – 1

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Let the steak sit at room temperature for 30 min.
  2. Boil water with 1 tsp salt in a large pot. Cook the spaghetti for slightly less than the recommended time on the package. Drain and set aside.
  3. Melt butter in a pan, sauté chopped onion until cooked. Add minced garlic and mushrooms, sauté until soft. Pour in brandy and cook until alcohol evaporates.
  4. Add broth to the pan, bring to a boil. Reduce heat, add whipping cream and mustard sauce. Cook until thickened. Season with salt.
  5. Season the steak with salt and black pepper. Sear in a preheated skillet for about 90 sec on each side. Drizzle with butter and rosemary. Let it rest on a rack for 5 min before slicing. Cook the side vegetables in the same pan.
  6. Plate the steak, side vegetables, and spaghetti. Pour the creamy mushroom sauce on top. Serve.
