簡易版麻婆豆腐 Mapo Tofu 中式食譜 川菜

❤️‍🔥簡易版麻婆豆腐📝食譜
烹調時間⏱15分鐘

🔸材料🔸
爆漿豆腐 1盒
免治豬肉 300g
芫荽根 3棵
薑粒 1茶匙
蒜頭 3瓣切碎
豆瓣醬 2-3茶匙
花椒油 1-2茶匙
蔥/ 指天椒 (可省略)

🔸醃料🔸
生抽 1湯匙
麻油 半茶匙
花雕酒 1茶匙

🔸調味料🔸
水 200ml
生抽 1茶匙
砂糖 半茶匙
生粉 2茶匙

🔹做法🔹

  1. 免治豬肉醃15分鐘
  2. 下油開鍋,加入芫荽根和蔥白炒香;下薑粒、蒜粒和免治豬肉炒碎;加入豆瓣醬炒至香味䆁出,放入爆漿豆腐炒勻
  3. 倒入調味料,煮沸後合蓋小火煮3分鐘;中火煮至醬汁濃稠;熄火淋上花椒油,灑上蔥花、芫茜和指天椒即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
1 box tofu
300g of minced pork
3 coriander roots
1 tsp of minced ginger
3 cloves of garlic, chopped
2-3 tsp of spicy bean paste
1 -2 tsp of Sichuan pepper oil
Scallions or chili (optional)

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tbsp soy sauce
½ tsp sesame oil
1 tsp Shaoxing wine

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
200ml of water
1 tsp soy sauce
1 tsp sugar
2 tsp potato starch

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Marinate minced pork for 15 mins.
  2. Heat oil in a pan; sauté coriander roots and scallion whites until fragrant. Add minced ginger, garlic, and pork, stirring until broken apart. Mix in bean paste until fragrant, add tofu.
  3. Pour in seasoning, bring to a boil, cover, and simmer on low for 3 mins. Cook over medium heat until sauce thickens. Turn off heat, drizzle with Sichuan pepper oil, and garnish with scallions, coriander and chili.
