今次用了新鮮沙白!$45斤非常肥美!加入粟米芯用來煮高湯超級鮮甜🥹用一部份煮炊飯,其餘做餐湯,非常滿足的放工晚餐🥰

❤️🔥蒜香牛油粟米大蜆炊飯📝食譜
烹調時間⏱45分鐘

🔸材料🔸 (2-3人份)
白米 1.5杯
昆布鰹魚高湯 1.5杯
蜆 1斤
本菇 1包
粟米 1條切粒
甘荀 半條切粒
蒜頭 5瓣磨蓉
牛油 1湯匙
🔸調味料🔸
日式醬油 1-2茶匙
味醂 1茶匙

🔹做法🔹
- ▪️處理大蜆▪️大蜆放入40度溫水,下半茶匙鹽、1/4條指天椒和半茶匙麻油,放陰暗處吐沙1小時
- ▪️預備高湯▪️ 2個昆布鰹魚高湯包放入700ml清水,中火煮至沸後,繼續煮2-3分鐘,取出高湯包
- 下牛油開鍋, 加入蒜蓉和本菇炒香,下粟米粒和甘荀炒勻;加入粟米芯和昆布鰹魚高湯,煮沸後加入沙白,煮至開口取出;高湯繼續煮15分鐘出味
- 電飯煲加入白米,按平時煮飯份量倒入高湯和調味料;加入部份粟米、本菇、甘荀和蜆肉拌勻,鋪上粟米芯,按下煮飯按鈕即成
- 剩餘的高湯可加額外日式醬油調味,灑上蔥花即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
White rice 1.5 cups
Bonito broth 1.5 cups
Clams 600g
Shiitake mushrooms 1 pack
Corn 1 px
Carrot 1/2px
Garlic 5 cloves, minced
Butter 1 sp
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Japanese soy sauce ~1-2 tsp
Mirin 1 tsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Soak clams in 40°C water with ½ tsp salt, ¼ chili pepper, and ½ tsp sesame oil for 1 hour to remove sand.
- Boil 2 bonito broth packs in 700ml water. Remove packs after 2-3 mins.
- Sauté minced garlic and shiitake mushrooms in butter. Add corn kernels, carrots, corn cobs, and kombu and bonito broth. Cook until clams open. Simmer for 15 mins.
- In a rice cooker, combine white rice, broth, and seasonings. Add some corn, shiitake mushrooms, carrots, and clam meat. Cook.
- Season remaining broth with soy sauce, garnish with scallions.
