🌰栗子冬菇炆雞翼📝食譜

烹調時間⏱40分鐘

🔸材料🔸

雞翼  8隻

冬菇  8粒

去殼栗子  12粒

甘荀  半條切片

蒜頭  4粒

薑  3片

乾蔥  2粒切件

紹興花雕酒  1茶匙

生粉水  50ml水+1湯匙生粉

🔸醃料🔸

生抽  2茶匙, 老抽  1茶匙

🔸調味料🔸

浸冬菇水  300ml

蠔油  約2湯匙

生抽  2茶匙

老抽  1湯匙

砂糖  1茶匙

🔹做法🔹

  1. 冬菇放入室溫水,放雪櫃浸一晚至軟身;雞翼醃至少30分鐘
  2. 下油開鍋,放入雞翼煎至兩邊金黃,移向一邊;下薑、乾蔥和蒜頭炒香;加入冬菇、栗子和甘荀,濽入紹興花雕酒
  3. 倒入調味料,煮沸後合蓋小火煮30分鐘
  4. 加入生粉水,中火煮至濃稠,灑上蔥花即成

🔸Ingredients🔸

Chicken wings 8 pieces

Dried mushrooms 8 pieces

Chestnuts, peeled 12 pieces

Carrot, sliced half

Garlic 4 cloves

Ginger 3 slices

Shallots 2 pieces, sliced

Shaoxing wine 1 teaspoon

Starch water 50ml water + 1 tablespoon starch

Spring onion

🔸Marinade🔸

Light soy sauce 2 teaspoons, Dark soy sauce 1 teaspoon

🔸Seasoning🔸

Water from soaking mushrooms 300ml

Oyster sauce about 2 tablespoons

Light soy sauce 2 teaspoons

Dark soy sauce 1 tablespoon

Sugar 1 teaspoon

🔹Instructions🔹

1. Soak the dried mushrooms in room temperature water and refrigerate overnight until soft; marinate the chicken wings for at least 30 minutes.

2. Heat oil in a pan, fry the chicken wings until golden brown on both sides, then set aside; sauté ginger, shallots, and garlic until fragrant; add mushrooms, chestnuts, and carrot, then deglaze with Shaoxing wine.

3. Pour in the seasoning, bring to a boil, then cover and simmer on low heat for 30 minutes.

4. Add starch water, cook over medium heat until thickened, sprinkle with spring onions, and serve.
