以前一直覺得海南雞飯要浸整隻雞,要好花時間先煮到🫨今次用雞髀扒和現成雞湯,全部材料倒入電飯煲煮,超級簡單!等飯熟的時間可以自製醬汁😎
大家可以按喜好選擇一兩款醬汁整,毋須全部都整🤣用雞髀扒的好處就是不用自己去骨,電飯煲煮熟後簡單切件就ok❤️🔥我加入雞汁豉油,淋面一齊食好好味!

🐥電飯煲海南雞飯📝食譜
烹調時間⏱45分鐘
🔸材料🔸
去骨雞髀扒 1-2塊
米 200g
雞湯 200ml
香茅 3條拍扁切段
南薑 3片 (可省略)
乾蔥 3粒切半
蒜 2瓣去皮
班蘭葉 2片打結
薑黃粉 半茶匙
🔸醃料🔸
鹽 半茶匙, 胡椒粉 適量, 薑黃粉 半茶匙, 薑 3片,蔥 1棵切段
🔸甜豉油🔸
生抽 3茶匙, 老抽 3茶匙, 砂糖 1湯匙, 水 30ml, 生粉 1茶匙
🔸薑蔥蓉🔸
薑 1塊 (切粒/磨蓉), 蔥 1棵切粒, 鹽, 熱油
🔸辣椒醬🔸
紅椒 半條切粒, 指天椒 1條切粒, 青檸汁 1茶匙, 砂糖 半茶匙, 魚露 1/4茶匙
🔸雞汁豉油🔸
雞湯 100ml, 老抽 1湯匙, 麻油 半茶匙

🔹做法🔹
- 雞扒解凍,剪走一部份雞皮和脂肪備用;雞扒醃30分鐘
- 下油開鍋,放入薑片、雞皮和脂肪小火煎至油份䆁出後取出;同一個鍋加入香茅、南薑、乾蔥和蒜粒炒香,加入白米炒勻吸收
- 全部倒入電飯煲,加入雞湯和黃薑粉混合,排上斑蘭葉和雞扒,按下煮飯模式即成
- 甜豉油:材料中火加熱,拌勻至濃稠
- 薑蓉:薑蔥和鹽放入碗中,淋上滾袖
- 辣椒醬:所有材料混合
- 雞汁豉油:材料中火加熱

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Boneless chicken thigh, 1-2 pcs
Rice, 200g
Chicken broth, 200ml
Lemongrass, 3 stalks,
Galangal, 3 slices (optional)
Dried shallots, 3 pcs, halved
Garlic, 2 cloves, peeled
Pandan leaves, 2 pcs, tied into a knot
Turmeric powder, 1/2 tsp
Marinade
Salt, 1/2 tsp, Pepper, to taste, Turmeric powder, 1/2 tsp, Ginger, 3 slices, Scallions, 1 stalk, cut into sections
Sweet Soy Sauce: Light soy sauce, 3 tsp, Dark soy sauce, 3 tsp, Sugar, 1 tbsp, Water, 30ml, Cornstarch, 1 tsp
Ginger Sauce: Ginger, 1 piece (diced/grated), Scallions, 1 stalk, diced,Salt,Hot oil
Chili Sauce: Red chili pepper, 1/2 pc, diced, Chili, 1 pc, diced, Lime juice, 1 tsp, Sugar, 1/2 tsp, Fish sauce, 1/4 tsp
Chicken Soy Sauce: Chicken broth, 100ml, Dark soy sauce, 1 tbsp, Sesame oil, 1/2 tsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Thaw the chicken cutlet and remove some skin and fat. Marinate the chicken cutlet for 30 mins.
- Heat oil in a pan and fry the chicken skin and fat until the oil is rendered. Remove from the pan. In the same pan, sauté lemongrass, galangal, dried shallots, and minced garlic. Add and stir-fry white rice.
- Transfer everything to an electric rice cooker. Add chicken broth and turmeric powder mixture. Place pandan leaves and chicken cutlet on top. Cook using the rice mode.
- Prepare sweet soy sauce by heating and stirring the ingredients until thickened.
- Make ginger paste by mixing ginger, scallions, salt, and pouring boiling water over them.
- Mix all the ingredients to make chili sauce.
- Heat the ingredients to make chicken gravy soy sauce.
