越式香茅蕃茄肥牛烏冬 Vietnamese Lemongrass Beef Udon 東南亞食譜 烏冬食譜

最近天天下雨沒什麼胃口,最適合吃酸酸甜甜的菜式!有睇開我post的大家應該對這個菜式不會陌生!之前煮的是牛肋條version配白飯,好多人回圖都好喜歡😗今次簡化了食譜,用新鮮牛頸脊代替牛肋條,非常簡單❤️又一個放工30分鐘快靚正菜式系列🤣有肉有菜好健康!

這個食譜重點是用椰子水煮汁,配上蕃茄,非常清甜🥹加入新鮮basil好香!配烏冬好好味呀🫶🏻

❤️‍🔥越式香茅蕃茄肥牛烏冬📝食譜
烹調時間⏱30分鐘

🔸材料🔸
急凍烏冬 2 片
肥牛片 200g
罐裝蕃茄 1罐400g壓蓉
香茅 4條拍扁切碎
乾蔥 2個切粒
蒜頭 4瓣切碎
薑 2片
椰子水 600ml
甘筍/粟米仔
金不換/ 羅勒葉 1棵
青檸 半個

🔸調味料🔸
魚露 1湯匙, 茄膏 1湯匙, 八角 1粒, 肉桂/桂皮 1條, 香葉 2片, 砂糖 1-2茶匙

🔹做法🔹

  1. 下油開鍋,下蒜頭、乾蔥、薑和香茅炒香,加入肥牛片,炒至半熟後盛起
  2. 同一個鍋下茄膏、八角、香葉和肉桂,拌炒至香味䆁出
  3. 加入罐裝蕃茄和椰子水,煮沸後合蓋小火煮15分鐘;下魚露和砂糖調味
  4. 加入蔬菜和烏冬煮熟,下肥牛片;熄火加入羅勒葉即成!可按口味擠上青檸汁

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Instant frozen udon noodles, 2 pcs
Beef slices, 200g
Canned tomatoes, 1 can (400g), crushed
4 stalks of lemongrass, flattened and chopped
2 dried shallots, diced
4 cloves of garlic, minced
2 slices of ginger
Coconut water, 600ml
Carrots/corn kernels
Basil leaves, 1 bunch
Half a lime

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Fish sauce 1 sp, 1 sp of tomato paste, 1 star anise, 1 cinnamon stick, 2 bay leaves, 1-2 tsp of sugar

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Heat oil and sauté garlic, shallots, ginger, and lemongrass. Add beef and stir-fry until partially cooked. Set aside.
  2. In the same pan, add tomato paste, star anise, bay leaves, and cinnamon. Sauté until fragrant.
  3. Add canned tomatoes and coconut water. Bring to a boil, cover, and simmer for 15 minutes. Season with fish sauce and sugar.
  4. Add vegetables and udon. Cook until done. Add beef. Remove from heat and add basil leaves. Serve with a squeeze of lime juice to taste!
