🍎蜜糖蘋果寶貝鬆餅📝食譜
烹調時間⏱30分鐘

🔸材料🔸
無鹽牛油 20g
室溫雞蛋 2隻
麵粉 50g過篩
鮮奶 130ml
砂糖 15g

🔸醬汁🔸
蘋果 1個切片
無鹽牛油 10g
蜜糖 1湯匙
肉桂粉 半茶匙
水 150ml

🔹做法🔹

  1. ▪️煮蘋果醬汁▪️下牛油開鍋,煎香蘋果片,放入其餘醬汁材料煮沸,合蓋小火煮約15分鐘至蘋果軟淋,取出;中火繼續煮醬汁至濃稠
  2. 除牛油外,所有材料用打蛋器攪拌至無顆粒,表面起泡
  3. 焗爐預熱210度,放入鑄鐵鍋焗15分鐘
  4. 鑄鐵鍋放入牛油,溶化後搖勻令整個鑄鐵鍋邊都沾上牛油;倒入麵漿,放入焗爐210度焗約10-15分鐘至鬆餅膨漲,邊緣呈焦黃色
  5. 取出後鬆餅會回縮,鋪上蘋果片,淋上醬汁,灑上肉桂粉即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Unsalted butter: 20g
Room temperature eggs: 2
Sifted flour: 50g
Fresh milk: 130ml
Sugar: 15g

𝗦𝗮𝘂𝗰𝗲
Apple: 1 sliced
Unsalted butter: 10g
Honey: 1 tbsp
Cinnamon powder: 1/2 tsp
Water: 150ml

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Cook apple sauce: Melt butter in a pan, sauté apple slices, add remaining sauce ingredients, simmer covered for 15 mins until apples are soft. Remove apples and continue cooking sauce until thickened.
  2. Whisk all ingredients except butter until smooth.
  3. Preheat oven to 210°C. Place a greased cast-iron skillet in the oven for 15 mins.
  4. Melt butter in the skillet, pour in batter, and bake at 210°C for 10-15 mins until pancake is puffed and edges are golden.
  5. Remove pancake, top with apple slices, drizzle with sauce, sprinkle with cinnamon powder. Serve hot.
