香蒜橄欖油扁意粉 Aglio e Olio 黑白大廚 Netflix 西式意粉 食譜

最近迷上了Netflix黑白大廚❤️‍🔥見到他們的菜式都想馬上飛去韓國食!尤其是隱藏天才的aglio e olio🥹用了好特別的煮意粉方法!先將意粉煮3分鐘,盛起放上鋁盤,加橄欖油,再用另一個鋁盤蓋住,利用餘溫令意粉慢慢煮熟和熟成🌟

見佢用的包裝意粉牌子超市好常見,馬上買回家煮!今次好認真用了義大利蒜頭!用這個方法煮意粉實在太聰明🫨非常彈牙保持到al dante口感!雖然沒有拋鑊,乳化程度不夠全面,但已經好味過之前煮的version好多🥹聽聞隱藏天才的餐廳已經full booking,希望之後有機會試到!

❤️‍🔥香蒜橄欖油扁意粉📝食譜
烹調時間⏱15分鐘

🔸材料🔸
意粉 180g

橄欖油 60ml
蒜頭 6瓣切片, 1瓣磨蓉
煮意粉水 200ml
辣椒碎 半茶匙
蕃茜 1棵
巴馬臣芝士碎 1湯匙
黑胡椒碎 少量

🔹做法🔹

  1. 大鍋加水和1湯匙鹽煮沸,放入意粉,跟包裝建議的時間煮少一半;立即瀝乾水鋪上鋁盤,倒入橄欖油拌勻,蓋上另一個鋁盤靜置5分鐘
  2. 平底鑊加入橄欖油,放入蒜片和蕃茜莖 (油要完全覆蓋),小火煎至金黃,盛起;加入辣椒碎炒香 (怕辣可省略)
  3. 加入煮意粉水,大火煮沸;放入意粉,不斷翻炒至醬汁乳化,加入蕃茜碎和蒜蓉炒勻,下鹽調味,意粉呈理想軟硬度即可上碟;灑上黑胡椒碎和芝士碎即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Pasta: 180g
Garlic: 6 cloves sliced, 1 clove minced
Pasta cooking water: 200ml
Crushed chili flakes: ½ teaspoon
Parsley: 1 bunch
Grated Parmesan cheese: 1 tablespoon
Black pepper: a small amount

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Boil water with 1 tbsp of salt. Add pasta and cook for half the package time. Drain, spread on tray, drizzle with olive oil, mix, cover with another tray, set aside for 5 mins
  2. In a pan, heat olive oil, add garlic slices and parsley stems, fry on low heat until golden. Remove, then add crushed chili flakes and sauté until fragrant (omit if sensitive to spice)
  3. Add pasta cooking water to the pan and bring to a boil with high heat. Stir in pasta until the sauce emulsifies. Mix in chopped parsley and minced garlic, season with salt, cook until pasta is tender. Serve with black pepper and grated cheese. Enjoy!
