🇹🇭泰式香葉肉碎煎蛋飯📝食譜
烹調時間⏱20分鐘

🔸材料🔸(2人份)
雞蛋 2隻
免治豬肉 250g
蒜頭 4粒切碎
指天椒 (可省略)
魚露 1茶匙
青檸汁 1茶匙
⁡九層塔/羅勒葉

🔸豬肉醃料🔸
生抽 1茶匙
紹興花雕酒 1茶匙
胡椒粉

🔸調味料🔸
生抽 2茶匙
老抽 1茶匙
蠔油 1湯匙
砂糖/椰糖 1茶匙



🔹做法🔹

  1. 免治豬肉醃15分鐘;平底鑊下油,中火燒至冒煙,倒入蛋白煎至邊緣焦脆,中間放入蛋黃煎10秒定型,盛起
  2. 用鑊鏟移動雞蛋防黏,中火煎至
  3. 下油開鍋,加入蒜粒和指天椒碎炒香;下免治豬肉炒至粒粒分明
  4. 倒入調味料炒香,熄火加入青檸汁、魚露和九層塔葉炒勻即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 eggs
250g minced pork
4 cloves of garlic, chopped
Chili (optional)
1 tsp fish sauce
1 tsp lime juice
Thai basil or basil leaves

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tsp light soy sauce and shaoxing wine
Ground pepper

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
2 tsp soy sauce
1 tsp dark soy sauce
1 tbsp oyster sauce
1 tsp sugar

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Marinate minced pork for 15 mins. Heat oil in a pan until smoking, add egg whites. Fry until edges are crispy, add yolks in the center, cook for 10 sec.
  2. In the same pan, add oil, garlic, and crushed chili; sauté until fragrant. Add minced pork and stir-fry until separated.
  3. Add seasoning, stir-fry until fragrant, switch off heat and mix in lime juice, fish sauce, and Thai basil before serving.
