🇹🇭泰式香葉肉碎煎蛋飯📝食譜
烹調時間⏱20分鐘
🔸材料🔸(2人份)
雞蛋 2隻
免治豬肉 250g
蒜頭 4粒切碎
指天椒 (可省略)
魚露 1茶匙
青檸汁 1茶匙
九層塔/羅勒葉
🔸豬肉醃料🔸
生抽 1茶匙
紹興花雕酒 1茶匙
胡椒粉
🔸調味料🔸
生抽 2茶匙
老抽 1茶匙
蠔油 1湯匙
砂糖/椰糖 1茶匙

🔹做法🔹
- 免治豬肉醃15分鐘;平底鑊下油,中火燒至冒煙,倒入蛋白煎至邊緣焦脆,中間放入蛋黃煎10秒定型,盛起
- 用鑊鏟移動雞蛋防黏,中火煎至
- 下油開鍋,加入蒜粒和指天椒碎炒香;下免治豬肉炒至粒粒分明
- 倒入調味料炒香,熄火加入青檸汁、魚露和九層塔葉炒勻即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 eggs
250g minced pork
4 cloves of garlic, chopped
Chili (optional)
1 tsp fish sauce
1 tsp lime juice
Thai basil or basil leaves
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
1 tsp light soy sauce and shaoxing wine
Ground pepper
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
2 tsp soy sauce
1 tsp dark soy sauce
1 tbsp oyster sauce
1 tsp sugar
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Marinate minced pork for 15 mins. Heat oil in a pan until smoking, add egg whites. Fry until edges are crispy, add yolks in the center, cook for 10 sec.
- In the same pan, add oil, garlic, and crushed chili; sauté until fragrant. Add minced pork and stir-fry until separated.
- Add seasoning, stir-fry until fragrant, switch off heat and mix in lime juice, fish sauce, and Thai basil before serving.
