今次用日本廢油凝固劑處理炸油,又幾得意🙂↕️可以睇片尾!!

❤️🔥蜜椒薯仔牛柳粒📝食譜
烹調時間⏱45分鐘
🔸材料🔸
牛柳粒 230g
薯仔 2個切粒
蒜頭 4瓣
洋蔥 1個切片
三色椒 各1個切片
🔸醃料🔸
水 3湯匙
生抽 1茶匙
生粉 半茶匙
黑胡椒碎
生油 1茶匙
🔸調味料🔸
水 100ml
黑胡椒碎 1茶匙
蜜糖 3湯匙
蠔油 1湯匙
生抽 2茶匙
老抽 1 茶匙
生粉 1茶匙
🔹做法🔹
- 牛柳粒醃15分鐘;所有調味料拌勻備用
- 薯粒浸水15分鐘除去澱粉質,蒸10分鐘;用廚房紙吸乾水份
- 炸鍋熱油,大火燒至冒煙180度後轉中小火,下薯粒炸約3分鐘至表面金黃,盛起靜置5分鐘;再大火炸1-2分鐘至焦脆,瀝乾油份 (如不想油炸,可半煎炸薯粒至金黃焦香)
- 下油開鍋,加入牛柳粒煎封每一邊;盛起
- 同一個鑊加入蒜粒和洋蔥爆香,加入三色椒拌炒;下牛柳粒和薯粒,倒入調味料大火炒勻至醬汁濃稠,灑上黑胡椒碎即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Diced beef tenderloin: 230g
Potatoes: 2, diced
Garlic: 4 cloves
Onion: 1, sliced
Tri-color bell peppers: 1 each, sliced
𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Water: 3 tbsp
Soy sauce: 1 tsp
Cornstarch: ½ tsp
Black pepper
Oil: 1 tsp
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Water: 100ml
Black pepper: 1 tsp
Honey: 3 tbsp
Oyster sauce: 1 tbsp
Soy sauce: 2 tsp
Dark soy sauce: 1 tsp
Potato starch: 1 tsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Marinate beef 15 mins. Mix all seasonings well and set aside.
- Soak potato dice 15 mins to remove starch; steam 10 mins. Pat dry with paper towel.
- Heat oil in a pot until smoking (180°C). Turn medium-low heat, fry potatoes 3 mins until golden. Rest 5 mins, high-heat fry 1–2 mins until crispy. Drain. (Or pan-fry until golden)
- Heat oil in pan, sear beef on all sides; set aside.
- In the same pan, sauté garlic and onion until fragrant. Add peppers, stir-fry. Return beef and potatoes. Pour in seasoning, stir-fry high heat until sauce thickens. Sprinkle black pepper.
