☀️鹹蛋蒸肉餅山📝食譜
烹調時間⏱30分鐘
🔸材料🔸
梅頭豬肉(3成肥) 300g
生粉水 30ml水 + 1茶匙生粉
生抽 1茶匙
老抽 半茶匙
玫瑰露酒 1茶匙
胡椒粉
油 1茶匙
鹹蛋 1隻
甜豉油 1湯匙
🔹做法🔹
- 梅頭豬肉攪碎,加入生粉水拌勻;下生抽、老抽、玫瑰露酒、胡椒粉和咸蛋白拌勻;最後加入油,醃1小時
- 將肉碎堆高,放上鹹蛋黃
- 用「Steam+」模式將蒸焗爐預熱至120°C,放入肉餅,蒸約25分鐘;放上蔥花,倒入甜豉油即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Minced Pork (30% fat) 300g
Water and Cornstarch Mixture: 30ml water + 1 tsp cornstarch
Light Soy Sauce: 1 tsp
Dark Soy Sauce: 1/2 tsp
Rose Wine: 1 tsp
Ground Pepper
Oil: 1 tsp
Salted Duck Egg: 1
Sweet Soy Sauce: 1 tbsp
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Mix the minced pork with the water and cornstarch mixture; add light soy sauce, dark soy sauce, rose wine, ground pepper, and salted duck egg white; finally, add oil and marinate for 1 hour.
- Pile up the minced meat and place the salted duck egg yolk on top.
- Preheat the steam oven to 120°C using the “Steam+” mode, place the meatloaf inside, steam for about 25 minutes; garnish with chopped spring onions and drizzle with sweet soy sauce before serving.
