簡易花膠撈蝦籽麵 Chinese Noodles with Fish Maw 中式食譜 花膠食譜

Easy 30 mins recipe❤️‍🔥最後一日的1人前晚餐😗昨晚出story不少人問有沒有這麼快30分鐘就煮好🤓絕對沒誇張!做法好簡單,買齊材料大家跟住食譜都整到!

平時花膠發好我會放冰格保存,想食的時候解凍就OK❤️用蠔油炆25分鐘入味,再加入蝦籽超級香!醬汁好黏嘴滿滿骨膠原,足料過出街食呀!海味都是自己煮抵好多🥹煮蝦籽麵嘅湯不要浪費,加入韮王超級香!

🌸簡易花膠撈蝦籽麵📝食譜
烹調時間⏱30分鐘

🔸材料🔸 (2人份)
蝦籽麵 2-3個
花膠 2塊
乾蔥 2粒切半
蒜頭 3瓣切片
薑 3片
冰糖 1茶匙
雞湯 200ml
水 200ml
生粉水 (2茶匙生粉+50ml水)
蝦籽粉, 韮王

🔸調味料🔸
生抽 2湯匙, 老抽 1茶匙, 蠔油 2湯匙, 紹興酒 1茶匙

🔹做法🔹

  1. ▪️浸發花膠▪️花膠不用清洗,直接放上大碟,淋上1茶匙米酒蒸約8分鐘;放入清潔無油的容器,用清水放雪櫃浸發3晚,每天更換清水一次,放冰格保存
  2. ▪️炆花膠▪️下油開鍋,爆香薑片、乾蔥和蒜頭;加入冰糖拌炒至溶化
  3. 加入雞湯、清水和調味料,放入已浸發的花膠,大火煮滾後小火炆25分鐘;加入生粉水,中火煮至湯汁濃稠
  4. ▪️煮蝦籽麵▪️麵餅放入滾水煮熟,瀝乾上碟;鋪上花膠,淋上花膠汁,灑上蝦籽粉;煮麵湯汁加入韮王煮熟,一同上桌即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Shrimp roe noodles, 2-3 pcs
Fish maw, 2 pcs
Dried shallots, 2 cloves, halved
Garlic, 3 cloves, sliced
Ginger, 3 slices
Rock sugar, 1 tsp
Chicken broth, 200ml
Water, 200ml
Potato starch water (2 tsp potato starch + 50ml water)
Shrimp roe powder, Chinese chives

𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Light soy sauce 2 sp, Dark soy sauce 1 tsp, Oyster sauce 2 sp, Shaoxing wine 1 tsp

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Steam fish maw without washing. Drizzle with rice wine and steam for 8 mins. Soak in water in the fridge for 3 nights, changing water daily. Store in the freezer
  2. Sauté ginger, shallots, and garlic. Add rock sugar.
  3. Add chicken broth, water, and seasonings. Add soaked fish maw. Boil, then simmer for 25 minutes. Add potato starch water and simmer until thick
  4. Cook noodles, drain, and plate. Top with fish maw, fish maw sauce, and shrimp roe powder. Serve with chive-infused noodle soup
