港式生炒牛肉飯 Fried Rice with Beef and Lettuce 中式食譜 炒飯食譜

All time comfort food😚旅行過後特別想念中式鑊氣小菜,突然好想吃生炒牛肉飯!炒飯吸收了肉汁特別正🥹買完牛肉生菜,想起買多了的生菜可以整生菜魚肉!

今次用了羅馬生菜,比較爽口💚最脆的莖部用來炒飯,軟淋的葉就用來煲湯!真是best combo呀🤣一餐有肉有魚有飯有湯有菜,營養均衡🌟做法材料都非常簡單,好適合放工快煮😎生菜魚肉食譜可以瀏覽我8月的post🫶🏻

P.S. 我用鐵鑊水份蒸發夠快,所以直接放生牛肉入炒飯煮;如果用其他鍋,建議先分開煎牛肉至8成熟,隔走多餘水份才放入炒飯!

🇭🇰港式生炒牛肉飯📝食譜
烹調時間⏱20分鐘

🔸材料🔸
牛柳/免治牛肉 250g剁碎
生菜 1棵切絲(約160g)
白飯 2碗
雞蛋 3隻
老抽 1茶匙
薑(可省略)、蔥

🔸牛肉醃料🔸
水 2湯匙 , 生抽 1茶匙, 老抽 半茶匙, 麻油 半茶匙, 蠔油 1湯匙, 砂糖 半茶匙, 生粉 1湯匙, 油 1湯匙

🔹做法🔹

  1. ▪️醃牛肉▪️牛肉加水,靜置10分鐘吸收水份;加入生抽、老抽、蠔油、生粉和砂糖拌勻;最後加入油鎖水,醃15分鐘
  2. ▪️炒飯▪️電飯煲煮熟米飯,拌散放涼30分鐘
  3. 大鑊燒熱至冒煙,下油和蛋液,中間放入米飯,下鹽調味,中火快手炒勻
  4. 加入牛肉,大火炒至乾身粒粒分明;下薑絲和老抽,加入生菜絲和蔥花炒勻即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Beef Fillet/Minced Beef 250g, minced
Lettuce 1 px, shredded (approx. 160g)
Rice 2 bowls
Eggs 3 px
Dark soy sauce 1 tsp
Ginger (optional), spring onions

𝗠𝗮𝗿𝗶𝗻𝗮𝗱𝗲
Water 2 sp, soy sauce 1 tsp, sesame oil 1/2 tsp, dark soy sauce 1/2 tsp, oyster sauce 1 sp, sugar 1/2 tsp, cornstarch 1 sp, oil 1sp

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀

  1. Soak beef in water for 10 mins. Add soy sauce, dark soy sauce, oyster sauce, cornstarch, and sugar. Mix well. Add oil, marinate for 15 mins.
  2. Cook rice in rice cooker. Let it cool for 30 mins.
  3. Heat wok, add oil and beaten eggs. Add rice, salt. Stir-fry quickly.
  4. Add minced beef, stir-fry until dry. Add ginger, dark soy sauce. Add lettuce, spring onions. Stir-fry and serve.
